Roberto Ortiz and I visited Red & White Catering to create the menus for the conference. In addition to using a local caterer, we decided to focus on local cuisine specialties. Our menus provide choices appropriate for omnivore, carnivore, herbivore, and gluten free dietary needs. Red & White, located in the neighboring hamlet of Chenango, opened in 1957 as a family owned and operated grocery store. Over the last 58 years they added Giuseppe’s Pizzeria and catering. Now run by the second and third generations of the Klenovic family, all their foods are handmade using their homegrown herbs and locally sourced meats and produce whenever possible. We are most fortunate that summer in the Southern Tier is the ideal moment for outstanding local produce!
Our opening dinner is a sampling of local BBQ favorites, including the Binghamton invention, spiedies (check it out on Wikipedia, there’s even a festival each year!), and classic pulled pork, beef brisket, baked beans, coleslaw and other goodies. As the weather cooperates, we’ll enjoy our meal outside.
Our closing dinner gives a nod to the area’s strong Italian community, most of whom arrived as immigrants during the late 19th and early 20th centuries to labor in the industrial factories making cigars and shoes, primarily. We will enjoy grilled chicken, eggplant parmesan, and lasagna, as well as great sides, and my favorite summer desert.
We have a few extra spaces for each dinner. Family traveling with presenters have right of first refusal for these spots, after that, non-presenting attendees may join us. Please send an email to email@example.com for details and to reserve a spot.
